This week marks the official 4-year mark from the very first Planted Table delivery. Our operation looks much different now than it did four years ago, we started with 20 families and 3 staff members. Now we serve over 200 families with over a dozen staff members. But our core values of providing organic, locally made plant based meals sustainably still stand strong. Thank you for allowing us to do what we love for four years!
Bahn Mi Sandwiches are back! Our best-selling and most popular sandwich combines the perfect combination of tangy and sweet. Instead of the traditional meat filling, we fill ours with zesty, marinated tofu. Pickled veggies and cilantro round out the flavors. Lemongrass and Coconut Tofu Bahn Mi Sandwich with Acme French Baguette, Sriracha Aioli, Pickled Carrots, Cucumber, Daikon, Cilantro, Jalapeno, Medium Spice.
Late Winter Caesar Salad with Radicchio, Roasted Celery Root, Roasted Kohlrabi, Grilled Pickled Red Onions, Sourdough Parmesan Croutons, Romaine and Mustard Flowers. It’s hearty, crunchy and totally satisfying, You are really going to love this salad…and trust me, every last bite will be gone!
This week we are offering our Butternut Squash Marinara Lasagna with Caramelized Onions, Sautéed Spinach and Crispy Sage. When the weather gets cold I love making these heart warming comfort food dishes for my family. This lasagna reminds me of what I call a “Grandmother recipe” where you spend time enjoying cooking and cherishing all the steps. Nothing like the smell of lasagna cooking in the oven on a cold fall day. After hiking and playing outside I love coming home to the smell of lasagna bubbling in the oven. I love when vegan comfort food and health are highlighted in the same dish.
