Thanksgiving is right around the corner, and it’s time to start planning your menu. Whether you are going for a traditional Thanksgiving menu featuring all the classics or looking to experiment with something new, you’re going to need a place to start.

We have compiled a short list of simple vegan Thanksgiving recipes to help you with everything you need to make a plant-based holiday feast!

1. Sweet Potato Casserole

Presenting the best sweet potato casserole with a nutty pecan topping that covers a creamy ginger-spiced layer of sweet potatoes.

And the best part? You can make this delicious and easy sweet potato casserole recipe with ingredients from your pantry!

Ingredients:

  • Sweet potatoes
  • Pecans and walnuts
  • Oats
  • Ginger
  • Garlic
  • Fresh rosemary
  • Sage
  • Dried thyme
  • Maple syrup
  • Almond milk
  • Olive oil
  • Salt and pepper

Method:

  1. Roast the sweet potatoes.
  2. Pulse the nuts, oats, rosemary, sage, thyme, garlic, maple syrup, olive oil, salt, and pepper in a food processor until combined to make the pecan topping.
  3. Peel and blend the sweet potatoes with almond milk, olive oil, ground ginger, and salt in a food processor.
  4. Spread the creamy sweet potato mixture at the bottom of a greased casserole dish.
  5. Sprinkle the crumble topping, a few whole pecans, and sage leaves for garnish.
  6. Bake at 425℉ until the topping is browned and crisp. Enjoy!

2. Cranberry Sauce

Cranberry sauce is an excellent addition to any vegan Thanksgiving dinner. You can sweeten it with maple syrup and orange zest for a punchy flavor.

For the best homemade cranberry sauce, visit your local farmer’s market and pick out fresh cranberries!

Ingredients:

  • Cranberries
  • Maple syrup
  • Orange zest
  • Water
  • Salt to taste

Method:

  1. Add the cranberries, maple syrup, orange zest, 1/4 cup water, and salt in a medium saucepan.
  2. Simmer and stir the mixture over medium-low heat.
  3. As the cranberries begin to burst, lower the heat and cook for 15 to 20 minutes.
  4. Continue to stir until the sauce thickens.

3. Stuffed Acorn Squash

With sage and rosemary adding an earthy aromatic flavor to the hearty tempeh and mushroom filling, this stuffed acorn squash recipe is perfect for Thanksgiving! 

It is satisfying and delicious and makes for a great center dish for your table!

Ingredients:

  • Tempeh
  • Mushrooms
  • Onion
  • Garlic
  • Sage
  • Rosemary
  • Apple cider vinegar
  • Tamari
  • Walnuts
  • Salt and pepper

Method:

  1. While the squash roasts, steam the tempeh and crumble it.
  2. Sauté the onion and mushrooms.
  3. Stir in the remaining filling ingredients.
  4. Season to taste.
  5. Check if the squash is fork-tender and remove it.
  6. Scoop in the filling and serve!

4. Pomegranate Rice Salad

Add an aromatic flavor to this festive pomegranate salad with spiced citrus dressing. For added benefits, top it with a handful of crispy roasted chickpeas.

Created with pomegranates, pistachios, and herbs, this fresh holiday side dish will brighten up your Thanksgiving table.

Ingredients:

  • Rice
  • Pomegranates
  • Olive oil
  • Mint leaves
  • Parsley
  • Scallions
  • Garlic
  • Pistachios
  • Pepper

Dressing

  • Extra-virgin olive oil
  • White wine vinegar
  • Fresh orange juice + zest
  • Fresh lemon juice
  • Maple syrup
  • Ground cumin
  • Ground coriander
  • Cinnamon
  • Sea salt
  • Freshly ground black pepper

Method:

  1. Cook the rice.
  2. For the dressing, whisk all the ingredients in a bowl and set aside.
  3. Lightly sauté the scallions and garlic in a pan.
  4. Stir the cooked rice into the pan, and add pistachios, half the dressing, and some parsley.
  5. Transfer the rice salad to a serving dish.
  6. Drizzle it with more dressing and top it with parsley, mint, and pomegranate.
